Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, combine the shredded chicken, white beans, green chilies, chicken broth, corn, cumin, garlic powder, onion powder, salt, and pepper.
- Bring the mixture to a boil over medium heat.
- Reduce heat and let it simmer for about 15 minutes, stirring occasionally.
- Stir in the sour cream until well combined.
- If desired, add shredded cheese and let it melt before serving.
- Serve hot and enjoy!
Notes
- For a spicier version, add jalapeños or cayenne pepper.
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
