Description

A delicious and hearty white chicken chili soup that combines tender chicken, beans, and a blend of spices for a comforting meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)


Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the shredded chicken, white beans, corn, and diced green chilies to the pot.
  3. Pour in the chicken broth and stir in the cumin and chili powder.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Stir in the sour cream and season with salt and pepper to taste.
  6. Serve hot, topped with shredded cheese if desired.

Notes

  • For a spicier version, add jalapeños or cayenne pepper.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
