Crispy and flavorful baked chicken taquitos made with shredded chicken, cheese, and spices rolled in corn tortillas. A healthier twist on a classic Mexican favorite that’s perfect for a snack or meal.
Ingredients
2 cups cooked shredded chicken
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup diced green onions
1/4 cup chopped fresh cilantro
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
12 corn tortillas

Instructions
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, diced green onions, chopped cilantro, ground cumin, chili powder, garlic powder, and salt. Mix well until all ingredients are evenly incorporated.
Warm the corn tortillas in the microwave for about 20 seconds to make them pliable.
Place about 2 tablespoons of the chicken mixture on one end of each tortilla. Roll the tortilla tightly around the filling and place seam side down on the prepared baking sheet.
Lightly spray the taquitos with cooking spray to help them crisp up in the oven.
Bake for 18 to 20 minutes, or until the taquitos are golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving.
