Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1 cup crumbled goat cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the chopped spinach, diced bell peppers, diced tomatoes, goat cheese, salt, pepper, garlic powder, and onion powder to the egg mixture.
  4. Mix until well combined.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
  7. Let cool for a few minutes before slicing and serving.
