Vegetarian Skillet Lasagna Recipe You Can’t Resist!

Description

A delicious and easy-to-make vegetarian skillet lasagna that combines layers of pasta, cheese, and vegetables in a single pan.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 jar (24 oz) marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook the lasagna noodles according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add zucchini, bell pepper, and mushrooms; cook until vegetables are tender.
  4. Stir in marinara sauce and Italian seasoning; bring to a simmer.
  5. Layer half of the cooked lasagna noodles over the sauce in the skillet.
  6. Spread half of the ricotta cheese over the noodles, followed by half of the mozzarella cheese.
  7. Repeat the layers with the remaining noodles, ricotta, and mozzarella cheese.
  8. Top with grated Parmesan cheese.
  9. Cover the skillet and cook on low heat for about 20 minutes, until the cheese is melted and bubbly.
  10. Let it cool for a few minutes before serving.

Notes

  • Feel free to add any other vegetables you like.
  • This dish can be made ahead of time and reheated.
  • For a spicier version, add red pepper flakes to the sauce.
