Description
A delicious and easy-to-make vegetarian skillet lasagna that combines layers of pasta, cheese, and vegetables in a single pan.
Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 1 jar (24 oz) marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add zucchini, bell pepper, and mushrooms; cook until vegetables are tender.
- Stir in marinara sauce and Italian seasoning; bring to a simmer.
- Layer half of the cooked lasagna noodles over the sauce in the skillet.
- Spread half of the ricotta cheese over the noodles, followed by half of the mozzarella cheese.
- Repeat the layers with the remaining noodles, ricotta, and mozzarella cheese.
- Top with grated Parmesan cheese.
- Cover the skillet and cook on low heat for about 20 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add any other vegetables you like.
- This dish can be made ahead of time and reheated.
- For a spicier version, add red pepper flakes to the sauce.
