Description
A refreshing and vibrant Vegan Pasta Salad tossed in a zesty lemon vinaigrette, perfect for any meal.
Ingredients
- 8 oz pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add any other vegetables you like.
- This salad can be made a day in advance for better flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days.
