Delicious and spooky vegan pudding cups perfect for Halloween celebrations.
Ingredients
- 1 cup almond milk
- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1/2 cup pumpkin puree
- 1/2 teaspoon pumpkin spice
- Vegan whipped cream for topping
- Chocolate sprinkles for decoration
Instructions
- In a bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract.
- Divide the mixture into two bowls. In one bowl, mix in cocoa powder, and in the other, mix in pumpkin puree and pumpkin spice.
- Layer the chocolate pudding and pumpkin pudding in cups.
- Refrigerate for at least 2 hours to set.
- Top with vegan whipped cream and chocolate sprinkles before serving.
Notes
- For a sweeter pudding, adjust the maple syrup to taste.
- Make sure to use unsweetened cocoa powder for a healthier option.
