Delicious and spooky vegan pudding cups perfect for Halloween celebrations.


Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • Vegan whipped cream for topping
  • Chocolate sprinkles for decoration


Instructions

  1. In a bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract.
  2. Divide the mixture into two bowls. In one bowl, mix in cocoa powder, and in the other, mix in pumpkin puree and pumpkin spice.
  3. Layer the chocolate pudding and pumpkin pudding in cups.
  4. Refrigerate for at least 2 hours to set.
  5. Top with vegan whipped cream and chocolate sprinkles before serving.

Notes

  • For a sweeter pudding, adjust the maple syrup to taste.
