Ingredients

  • 2 cups pasta (your choice)
  • 1 cup pumpkin puree
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine the pumpkin puree, olive oil, balsamic vinegar, salt, and pepper.
  3. Add the cooked pasta to the bowl and mix well to coat.
  4. Fold in the cherry tomatoes, bell peppers, red onion, feta cheese, and olives.
  5. Garnish with fresh basil before serving.
