Ingredients
- 2 cups pasta (your choice)
- 1 cup pumpkin puree
- 1/2 cup cherry tomatoes, halved
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large bowl, combine the pumpkin puree, olive oil, balsamic vinegar, salt, and pepper.
- Add the cooked pasta to the bowl and mix well to coat.
- Fold in the cherry tomatoes, bell peppers, red onion, feta cheese, and olives.
- Garnish with fresh basil before serving.
Notes
- For a vegan option, omit the feta cheese.
