Description

Twice Baked Sweet Potatoes are a delightful and nutritious dish that combines the natural sweetness of sweet potatoes with a creamy filling, making them perfect for a side dish or a main course.


Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup Greek yogurt
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake them for about 45-60 minutes until tender.
  3. Once baked, let them cool slightly, then cut them in half lengthwise and scoop out the flesh into a bowl.
  4. Add Greek yogurt, shredded cheese, butter, cinnamon, salt, and pepper to the sweet potato flesh and mix until smooth.
  5. Fill the sweet potato skins with the mixture and place them back in the oven for an additional 15-20 minutes.
  6. Garnish with chopped green onions before serving.
