Ingredients
- 4 medium sweet potatoes
- 1/2 cup Greek yogurt
- 1/4 cup shredded cheese (cheddar or your choice)
- 2 tablespoons butter
- 1 teaspoon cinnamon
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake them for about 45-60 minutes until tender.
- Once baked, let them cool slightly, then cut them in half lengthwise and scoop out the flesh into a bowl.
- Add Greek yogurt, shredded cheese, butter, cinnamon, salt, and pepper to the sweet potato flesh and mix until smooth.
- Fill the sweet potato skins with the mixture and place them back in the oven for an additional 15-20 minutes.
- Garnish with chopped green onions before serving.
