A hearty and flavorful soup made with white beans, vegetables, and aromatic herbs, inspired by the traditional Tuscan cuisine.
Ingredients
- 2 cups white beans (canned or cooked)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery; sauté until softened.
- Stir in minced garlic and cook for another minute.
- Add the white beans, diced tomatoes, vegetable broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- For a creamier texture, blend a portion of the soup and mix it back in.
