Description

A classic French dish that combines the rich flavors of garlic with a hearty broth, served with crusty bread for dipping.


Ingredients

  • 1 head of garlic
  • 4 cups of chicken or vegetable broth
  • 1 medium onion, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 4 slices of crusty bread
  • Grated cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the top off the head of garlic and drizzle with olive oil.
  3. Wrap the garlic in foil and roast in the oven for about 30 minutes.
  4. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  5. Add the roasted garlic (squeezed out of the skin) and thyme to the pot.
  6. Pour in the broth and bring to a simmer for 15 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot with crusty bread, optionally topped with grated cheese.

Notes

  • For a vegetarian version, use vegetable broth.
  • Adjust the amount of garlic based on your preference for garlic flavor.
  • Can be made ahead and reheated before serving.
