Chicken Roll Ups

Description

Tender chicken breasts pan-seared and baked, filled with a creamy mixture of cream cheese, fresh spinach, garlic, and herbs.


Ingredients

4 chicken breast fillets
4 ounces cream cheese
1 cup fresh spinach, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil


Instructions

Preheat oven to 375°F (190°C).
In a bowl, mix cream cheese, chopped spinach, minced garlic, dried oregano, salt, and black pepper until well combined.
Place each chicken breast fillet between two sheets of plastic wrap and gently pound to an even thickness.
Spread the cream cheese mixture evenly over each chicken breast.
Roll up each fillet tightly and secure with toothpicks if needed.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Pan-sear the chicken roll ups on all sides until golden brown, about 2-3 minutes per side.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken is cooked through and tender.
Remove toothpicks, slice each roll up into rounds, and arrange in a row on a white rectangular plate.
Garnish with fresh parsley sprigs before serving.
