Ingredients

  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup masa harina
  • 1/2 cup water
  • 1/4 cup chopped cilantro
  • 1 lime, juiced


Instructions

  1. In a large pot, combine chicken broth, diced tomatoes, corn, black beans, and bell peppers.
  2. Add cumin, chili powder, salt, and pepper. Bring to a simmer over medium heat.
  3. In a bowl, mix masa harina with water to form a dough.
  4. Shape the masa dough into small dumplings.
  5. Drop the dumplings into the simmering soup and cook for about 15 minutes until they are cooked through.
  6. Stir in chopped cilantro and lime juice before serving.
