Ingredients
- 4 cups sweet potatoes, mashed
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, and vanilla extract.
- Mix until smooth and well combined.
- Transfer the sweet potato mixture to a greased baking dish.
- Spread the mini marshmallows evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown.
Notes
- For a crunchier topping, broil the casserole for an additional 1-2 minutes after baking.
