Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced sweet potatoes and chopped apples, stirring to combine.
- Pour in the vegetable broth and add cinnamon, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
