Ingredients

  • 2 lbs stewing beef, cut into cubes
  • 1 cup rice
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 bay leaf
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the stewing beef and brown on all sides.
  4. Stir in the carrots, salt, pepper, and paprika.
  5. Add the beef broth and bay leaf, bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
  7. Stir in the rice, cover, and cook for an additional 20 minutes until rice is cooked.
  8. Remove bay leaf, garnish with fresh parsley, and serve hot.

Notes

  • For extra flavor, marinate the beef overnight.
  • Feel free to add other vegetables like peas or bell peppers.
  • Leftovers can be stored in the refrigerator for up to 3 days.
