Ingredients
- 2 lbs stewing beef, cut into cubes
- 1 cup rice
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
- 1 bay leaf
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the stewing beef and brown on all sides.
- Stir in the carrots, salt, pepper, and paprika.
- Add the beef broth and bay leaf, bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
- Stir in the rice, cover, and cook for an additional 20 minutes until rice is cooked.
- Remove bay leaf, garnish with fresh parsley, and serve hot.
Notes
- For extra flavor, marinate the beef overnight.
