Ingredients

  • 1 package phyllo dough
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add chopped spinach and cook until wilted, then remove from heat.
  4. In a bowl, combine the spinach mixture with feta cheese, cream cheese, salt, and pepper.
  5. Unroll the phyllo dough and cut it into squares to fit into a muffin tin.
  6. Layer the phyllo squares in the muffin tin, brushing each layer with olive oil.
  7. Fill each phyllo cup with the spinach and feta mixture.
  8. Bake for 15-20 minutes or until the phyllo is golden brown.
  9. Let cool slightly before serving.
