Ingredients
- 1 package phyllo dough
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add chopped spinach and cook until wilted, then remove from heat.
- In a bowl, combine the spinach mixture with feta cheese, cream cheese, salt, and pepper.
- Unroll the phyllo dough and cut it into squares to fit into a muffin tin.
- Layer the phyllo squares in the muffin tin, brushing each layer with olive oil.
- Fill each phyllo cup with the spinach and feta mixture.
- Bake for 15-20 minutes or until the phyllo is golden brown.
- Let cool slightly before serving.
Notes
- Make sure to keep the phyllo dough covered with a damp cloth to prevent it from drying out.
- These cups can be made ahead of time and frozen before baking.
- Feel free to add other ingredients like sun-dried tomatoes or herbs for extra flavor.
