Ingredients

  • 1 kg chicken, cut into pieces
  • 2 cups tomatoes, blended
  • 1 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 1/4 cup vegetable oil
  • 2 tablespoons ground crayfish
  • 2 tablespoons ground pepper (or to taste)
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 cups chicken broth
  • Salt to taste


Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the minced ginger and garlic, and cook for another minute.
  4. Stir in the blended tomatoes and cook until the sauce thickens.
  5. Add the chicken pieces and cook until they are browned on all sides.
  6. Pour in the chicken broth and bring to a boil.
  7. Add the ground crayfish, ground pepper, and salt to taste.
  8. Reduce heat and let it simmer for about 30 minutes or until the chicken is cooked through.
  9. Stir in the chopped bell peppers and cook for an additional 5 minutes.
  10. Serve hot with rice or bread.
