A delicious Southern-style casserole made with sweet potatoes and a rich maple syrup topping, perfect for holiday gatherings.
Ingredients
- 4 cups sweet potatoes, mashed
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup milk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup pecans, chopped
- 1/4 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, milk, eggs, vanilla extract, cinnamon, and nutmeg.
- Mix until well combined and smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix the chopped pecans with melted butter and sprinkle over the sweet potato mixture.
- Bake for 30-35 minutes or until the top is golden brown and the casserole is set.
- Let it cool slightly before serving.
Notes
- For a vegan version, substitute eggs with flaxseed meal and use plant-based milk.
- Can be prepared a day in advance and baked before serving.
- Adjust the sweetness by adding more or less maple syrup according to taste.
