Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 4 cups chicken broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 cup green beans, trimmed
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
- Transfer the browned chicken to the slow cooker.
- Add the chopped vegetables, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
- Pour the chicken broth over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Shred the chicken with two forks and stir it back into the stew before serving.
Notes
- Feel free to add other seasonal vegetables like squash or parsnips.
- This stew can be made a day in advance and tastes even better the next day.
