Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 cup green beans, trimmed
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped vegetables, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Pour the chicken broth over the ingredients in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  6. Shred the chicken with two forks and stir it back into the stew before serving.

Notes

  • Feel free to add other seasonal vegetables like squash or parsnips.
  • This stew can be made a day in advance and tastes even better the next day.
