Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the orzo and spinach to the slow cooker.
  6. Once the orzo is cooked, stir in the Parmesan cheese until melted and creamy.
  7. Serve warm and enjoy!
