Description
A delicious and flavorful shrimp quesadilla filled with creamy avocado, perfect for a quick meal or snack.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 avocado, sliced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp, garlic powder, paprika, salt, and pepper. Cook until shrimp are pink and cooked through, about 3-4 minutes.
- Remove shrimp from skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
- Add a layer of cooked shrimp and avocado slices on top of the cheese.
- Sprinkle the remaining cheese over the shrimp and fold the tortilla in half.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or onions for extra flavor.
- Serve with salsa or sour cream for dipping.
- Can be made gluten-free by using corn tortillas.
