Description

A delicious and easy-to-make dish featuring roasted California grapes and gnocchi, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound gnocchi
  • 2 cups California grapes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, toss the gnocchi and grapes with olive oil, salt, pepper, and rosemary.
  3. Spread the mixture in a single layer on the sheet pan.
  4. Roast in the oven for 20-25 minutes, or until the gnocchi are golden and the grapes are caramelized.
  5. Remove from the oven and sprinkle with Parmesan cheese if desired.
  6. Serve warm and enjoy!
