Description

A quick and easy weeknight dinner featuring mini meatloaf and roasted potatoes, all cooked on a single sheet pan for minimal cleanup.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into small meatloaves and place them on one side of a sheet pan.
  4. In another bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, salt, and pepper.
  5. Spread the seasoned potatoes on the other side of the sheet pan.
  6. Bake in the preheated oven for 25-30 minutes, or until the meatloaf is cooked through and the potatoes are tender.
  7. Serve warm and enjoy your easy weeknight dinner!

Notes

  • Feel free to add your favorite vegetables to the sheet pan.
  • Leftovers can be stored in the refrigerator for up to 3 days.
