Description
A quick and easy weeknight dinner featuring mini meatloaf and roasted potatoes, all cooked on a single sheet pan for minimal cleanup.
Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup ketchup
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into small meatloaves and place them on one side of a sheet pan.
- In another bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, salt, and pepper.
- Spread the seasoned potatoes on the other side of the sheet pan.
- Bake in the preheated oven for 25-30 minutes, or until the meatloaf is cooked through and the potatoes are tender.
- Serve warm and enjoy your easy weeknight dinner!
Notes
- Feel free to add your favorite vegetables to the sheet pan.
- Leftovers can be stored in the refrigerator for up to 3 days.
