Ingredients
- 1 pound gnocchi
- 1 pound Italian sausage, sliced
- 2 cups cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- On a large sheet pan, combine the gnocchi, sausage, cherry tomatoes, bell pepper, and red onion.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
- Toss everything together until well coated.
- Spread the mixture in an even layer on the sheet pan.
- Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender.
- Remove from the oven and garnish with fresh basil before serving.
Notes
- Feel free to add other vegetables like zucchini or spinach.
