A delicious and easy one-pan meal featuring chicken, sweet potatoes, apples, and a variety of vegetables, perfect for a weeknight dinner.
Ingredients
- 4 chicken thighs
- 2 medium sweet potatoes, cubed
- 2 apples, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sweet potatoes, apples, bell peppers, and onion.
- Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Toss to coat.
- Spread the vegetable mixture on a sheet pan.
- Place the chicken thighs on top of the vegetables.
- Drizzle a little more olive oil over the chicken and season with salt and pepper.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve warm and enjoy!
