Ingredients
- 1 medium head of cauliflower
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

- Fresh parsley for garnish
Instructions
- Remove the leaves and stem from the cauliflower and shave it into thin slices using a mandoline or sharp knife.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the vinaigrette.
- In a large bowl, combine the shaved cauliflower and vinaigrette, tossing to coat evenly.
- Sprinkle the grated Parmesan cheese over the salad and toss gently.
