Description

A refreshing and light salad featuring shaved cauliflower, tossed in a zesty lemon vinaigrette and topped with Parmesan cheese.


Ingredients

  • 1 medium head of cauliflower
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish


Instructions

  1. Remove the leaves and stem from the cauliflower and shave it into thin slices using a mandoline or sharp knife.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the vinaigrette.
  3. In a large bowl, combine the shaved cauliflower and vinaigrette, tossing to coat evenly.
  4. Sprinkle the grated Parmesan cheese over the salad and toss gently.
  5. Garnish with fresh parsley before serving.

Notes

  • For a vegan version, omit the Parmesan cheese or use a dairy-free alternative.
