Description
Salmon fillet pan-seared and oven-baked with a sweet and tangy pineapple glaze, garnished with pineapple slices and green onions.
Ingredients
2 salmon fillets
1/2 cup pineapple juice
2 tablespoons brown sugar
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
Thin pineapple slices (for garnish)
Chopped green onions (for garnish)
Instructions
Preheat oven to 375°F (190°C).
In a small saucepan, combine pineapple juice, brown sugar, soy sauce, garlic, and ginger. Simmer over medium heat until slightly thickened, about 5 minutes. Set aside.
Pat salmon fillets dry and season both sides with salt and black pepper.
Heat olive oil in a skillet over medium-high heat. Add salmon fillets skin-side down (if skin-on) and sear until crispy and golden, about 3-4 minutes.
Flip salmon and brush with pineapple glaze.
Transfer skillet to the preheated oven and bake for 8-10 minutes until salmon is cooked through and flakes easily.
Remove from oven, brush with additional pineapple glaze.
Plate salmon fillets centered on plates, brush with more glaze on top, and garnish with thin pineapple slices and chopped green onions.
