Description
A quick and comforting one-pan dinner featuring tender chicken breasts cooked in a garlic butter sauce with fresh zucchini and sweet corn.
Ingredients
4 boneless, skinless chicken breasts
3 tablespoons unsalted butter
4 cloves garlic, minced
2 medium zucchinis, sliced
1 cup fresh corn kernels
Salt and pepper, to taste
1 teaspoon dried thyme
1 tablespoon olive oil
Instructions
Season chicken breasts with salt, pepper, and thyme.
Heat olive oil in a large skillet over medium heat.
Add chicken and cook about 5-6 minutes per side until golden and cooked through. Remove and set aside.
Lower heat and melt butter in the same skillet.
Add garlic and sauté for 1 minute until fragrant.
Add zucchini and corn, cooking until tender, about 5 minutes.
Return chicken to the skillet and spoon garlic butter sauce over the top.
Cook together for another 2 minutes to meld flavors.
Serve warm.
