Garlic Butter Chicken with Zucchini & Corn

Description

Juicy chicken breasts cooked in a rich garlic butter sauce with fresh zucchini and sweet corn for a wholesome, easy dinner.


Ingredients

4 boneless, skinless chicken breasts
3 tablespoons unsalted butter
4 cloves garlic, minced
1 medium zucchini, sliced
1 cup fresh corn kernels
Salt and pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (optional)


Instructions

Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add chicken and cook until golden and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
In the same skillet, melt butter and add minced garlic. Cook until fragrant, about 1 minute.
Add zucchini slices and corn kernels; sauté until tender, about 5 minutes.
Return chicken to the skillet, spoon sauce and veggies over, and cook for another 2 minutes to combine flavors.
Garnish with chopped parsley before serving.
