Ingredients
- 2 pounds ripe tomatoes, halved
- 1 onion, chopped
- 4 cloves garlic, peeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 2 cups vegetable broth
- 1 tablespoon balsamic vinegar
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved tomatoes, chopped onion, and garlic on a baking sheet.
- Drizzle with olive oil and season with salt, pepper, and dried basil.
- Roast in the oven for 25-30 minutes until the tomatoes are caramelized.
- Transfer the roasted vegetables to a pot and add vegetable broth and balsamic vinegar.
- Simmer for 10 minutes, then blend until smooth.
- Serve hot, garnished with fresh basil leaves.
Notes
- For a creamier soup, add a splash of heavy cream or coconut milk before serving.
- Adjust seasoning to taste.
