Ingredients

  • 2 pounds ripe tomatoes, halved
  • 1 onion, chopped
  • 4 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 2 cups vegetable broth
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved tomatoes, chopped onion, and garlic on a baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and dried basil.
  4. Roast in the oven for 25-30 minutes until the tomatoes are caramelized.
  5. Transfer the roasted vegetables to a pot and add vegetable broth and balsamic vinegar.
  6. Simmer for 10 minutes, then blend until smooth.
  7. Serve hot, garnished with fresh basil leaves.
