Ingredients
- 1 lb heirloom carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp honey
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the heirloom carrots with olive oil, salt, and black pepper.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- In a large bowl, combine the mixed greens, roasted carrots, feta cheese, and walnuts.
- In a small bowl, whisk together balsamic vinegar and honey.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!
