Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 cup sliced almonds
- 1/2 cup pitted olives, sliced
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.
- In a separate bowl, combine the roasted cauliflower, sliced almonds, olives, feta cheese, and lemon juice.
- Toss gently to combine all ingredients.
- Garnish with fresh parsley before serving.
