Description
A delicious and healthy dish featuring roasted butternut squash topped with sweet candied walnuts.
Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup walnuts
- 1/2 cup brown sugar
- 1/4 cup water
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- In a saucepan, combine walnuts, brown sugar, water, and cinnamon over medium heat.
- Cook until the sugar dissolves and the mixture thickens, about 5 minutes.
- Remove from heat and let cool slightly.
- Once the squash is done, top it with the candied walnuts before serving.
Notes
- For a vegan version, ensure the brown sugar is vegan-friendly.
- Can be served warm or at room temperature.
- Store leftovers in an airtight container in the refrigerator.
