Ingredients
- 1 cup canned pumpkin puree
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 packet taco seasoning
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn, drained
- 1/4 cup diced tomatoes
- 1/4 cup chopped green onions
- Tortilla chips for serving
Instructions
- In a mixing bowl, combine the pumpkin puree and cream cheese until smooth.
- Add the shredded cheddar cheese, sour cream, and taco seasoning. Mix well.
- Fold in the black beans, corn, diced tomatoes, and green onions.
- Transfer the mixture to a serving dish and smooth the top.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve with tortilla chips for dipping.
