Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, drained
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Tortilla chips for serving


Instructions

  1. In a mixing bowl, combine the pumpkin puree and cream cheese until smooth.
  2. Add the shredded cheddar cheese, sour cream, and taco seasoning. Mix well.
  3. Fold in the black beans, corn, diced tomatoes, and green onions.
  4. Transfer the mixture to a serving dish and smooth the top.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Serve with tortilla chips for dipping.
