Description

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon nutmeg
  • Salt to taste
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • Fresh sage leaves for garnish


Instructions

  1. In a bowl, mix the flour and eggs to form a dough.
  2. Roll out the dough into thin sheets.
  3. In another bowl, combine pumpkin puree, ricotta, Parmesan, nutmeg, and salt.
  4. Place small dollops of the filling on the dough sheets.
  5. Fold the dough over and cut into ravioli shapes.
  6. Boil the ravioli in salted water until they float.
  7. In a pan, melt butter and add sage leaves.
  8. Serve the ravioli topped with sage butter.
