Ingredients
- 1 cup pumpkin puree
- 1/2 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup chocolate chips (optional)
Instructions
- In a large bowl, combine pumpkin puree, rolled oats, protein powder, almond butter, and honey or maple syrup.
- Add cinnamon and nutmeg, mixing until well combined.
- If desired, fold in chocolate chips.
- Refrigerate the mixture for about 30 minutes to firm up.
- Once chilled, scoop out small portions and roll them into bite-sized balls.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to substitute almond butter with peanut butter or any nut butter of your choice.
- These bites can be frozen for longer storage.
