Pumpkin Protein Bites are a nutritious and delicious snack packed with protein and flavor, perfect for a quick energy boost.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup chocolate chips (optional)


Instructions

  1. In a large bowl, combine pumpkin puree, rolled oats, protein powder, almond butter, and honey or maple syrup.
  2. Add cinnamon and nutmeg, mixing until well combined.
  3. If desired, fold in chocolate chips.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, scoop out small portions and roll them into bite-sized balls.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes

  • Feel free to substitute almond butter with peanut butter or any nut butter of your choice.
  • These bites can be frozen for longer storage.
