Ingredients

  • 8 oz pasta (penne or rigatoni)
  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup vegetable broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente, then drain.
  3. In a large bowl, mix together the pumpkin puree, ricotta cheese, vegetable broth, garlic powder, onion powder, nutmeg, salt, and pepper.
  4. Add the cooked pasta to the pumpkin mixture and stir until well combined.
