Ingredients
- 8 oz pasta (penne or rigatoni)
- 1 cup pumpkin puree
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup vegetable broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp nutmeg
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente, then drain.
- In a large bowl, mix together the pumpkin puree, ricotta cheese, vegetable broth, garlic powder, onion powder, nutmeg, salt, and pepper.
- Add the cooked pasta to the pumpkin mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
