Delicious and fluffy pumpkin donut holes, perfect for fall and packed with warm spices.
Ingredients
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- 1/4 cup powdered sugar (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut hole pan.
- In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each donut hole cavity about 2/3 full with the batter.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before removing from the pan.
- Roll the warm donut holes in powdered sugar to coat.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add chocolate chips or nuts to the batter.
- These can be frozen for later enjoyment.
