Ingredients
- 8 oz cream cheese, softened

- 1 cup powdered sugar

- 1 cup graham cracker crumbs
- 12 oz chocolate chips (for coating)
Instructions
- In a mixing bowl, combine softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
- Fold in the graham cracker crumbs until well incorporated.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Once chilled, scoop out small portions and roll them into balls.
- Place the truffles on a baking sheet lined with parchment paper and freeze for about 15 minutes.
- Melt the chocolate chips in a microwave or double boiler.
- Dip each truffle into the melted chocolate, ensuring they are fully coated.
- Return the coated truffles to the baking sheet and let them set until the chocolate hardens.
- Store in the refrigerator until ready to serve.
