Ingredients

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup graham cracker crumbs
  • 12 oz chocolate chips (for coating)


Instructions

  1. In a mixing bowl, combine softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
  2. Fold in the graham cracker crumbs until well incorporated.
  3. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  4. Once chilled, scoop out small portions and roll them into balls.
  5. Place the truffles on a baking sheet lined with parchment paper and freeze for about 15 minutes.
  6. Melt the chocolate chips in a microwave or double boiler.
  7. Dip each truffle into the melted chocolate, ensuring they are fully coated.
  8. Return the coated truffles to the baking sheet and let them set until the chocolate hardens.
  9. Store in the refrigerator until ready to serve.
