POTATO, VEGETABLE, CHEESE SOUP: A Creamy Delight Awaits!

Description

A creamy and delicious potato, vegetable, and cheese soup that is perfect for a comforting meal.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste


Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced potatoes and mixed vegetables, stirring to combine.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  6. Using an immersion blender, blend the soup until smooth (or blend in batches in a regular blender).
  7. Stir in the milk and shredded cheese until melted and well combined.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

  • For a thicker soup, blend more of the potato mixture.
  • Feel free to add your favorite herbs for extra flavor.
