Description

Delicious whoopie pies featuring red, white, and blue colors, perfect for patriotic celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • Red and blue food coloring
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 tsp vanilla extract (for filling)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients and buttermilk, alternating between them.
  6. Divide the batter into two bowls; tint one red and the other blue using food coloring.
  7. Drop spoonfuls of each color onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until set. Let cool completely.
  9. For the filling, beat together marshmallow fluff, powdered sugar, butter, and vanilla extract until smooth.
  10. Spread the filling on the flat side of one cookie and sandwich with another cookie.
