Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add chicken thighs to the pot and sprinkle with shawarma spice mix. Cook until chicken is browned on all sides.
  3. Stir in the diced tomatoes and chicken broth, bringing the mixture to a boil.
  4. Add the basmati rice, stirring to combine. Season with salt and pepper.
  5. Cover the pot and reduce heat to low. Cook for about 20 minutes or until rice is tender and liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  7. Garnish with fresh parsley before serving.
