Ingredients
- 1 lb chicken thighs, boneless and skinless
- 2 cups basmati rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons shawarma spice mix
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add chicken thighs to the pot and sprinkle with shawarma spice mix. Cook until chicken is browned on all sides.
- Stir in the diced tomatoes and chicken broth, bringing the mixture to a boil.
- Add the basmati rice, stirring to combine. Season with salt and pepper.
- Cover the pot and reduce heat to low. Cook for about 20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh parsley before serving.
