A rich and creamy no-bake coffee cheesecake that combines the flavors of coffee and cream cheese for a delightful dessert.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- ½ cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- Chocolate shavings for garnish (optional)
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- Add the cooled coffee and vanilla extract to the cream cheese mixture and mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the coffee mixture until fully incorporated.
- Pour the cheesecake filling over the crust in the springform pan.
- Refrigerate for at least 4 hours or until set.
- Garnish with chocolate shavings before serving.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure the cream cheese is at room temperature for easier mixing.
- This cheesecake can be made a day in advance for convenience.
