Description
A hearty and flavorful Mexican beef stew that combines tender beef with a variety of spices and vegetables for a comforting meal.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add onion and garlic, sauté until softened.
- Add carrots, potatoes, and bell pepper, cooking for a few minutes.
- Stir in the diced tomatoes, beef broth, chili powder, cumin, oregano, salt, and pepper.
- Return the beef to the pot, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier stew, add jalapeños or cayenne pepper.
- This stew can be made in a slow cooker; just adjust the cooking time accordingly.
- Serve with warm tortillas or rice for a complete meal.
