Ingredients

  • 1 bunch of kale, stems removed and leaves chopped
  • 1 large sweet potato, peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: avocado, nuts, or seeds


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potato with 1 tablespoon of olive oil, salt, and pepper, and spread on a baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes, or until tender and slightly caramelized.
  4. In a large bowl, combine the chopped kale with 1 tablespoon of olive oil and massage the leaves for about 2-3 minutes until they are tender.
  5. Add the roasted sweet potatoes and black beans to the massaged kale.
  6. Drizzle with lemon juice and sprinkle with garlic powder, mixing well to combine.
  7. Serve immediately, topped with optional avocado, nuts, or seeds if desired.
