Ingredients
- 1 bunch of kale, stems removed and leaves chopped
- 1 large sweet potato, peeled and diced
- 1 can (15 oz) black beans, rinsed and drained
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potato with 1 tablespoon of olive oil, salt, and pepper, and spread on a baking sheet.
- Roast the sweet potatoes for 25-30 minutes, or until tender and slightly caramelized.
