A fun and spooky treat perfect for Halloween, these Marshmallow Rice Bubbles are shaped like brains and are sure to delight kids and adults alike.
Ingredients
- 4 cups Rice Bubbles
- 1 cup mini marshmallows
- 1/4 cup butter
- 1/2 teaspoon vanilla extract
- Red food coloring
- White chocolate for drizzling
Instructions
- In a large saucepan, melt the butter over low heat.
- Add the mini marshmallows and stir until completely melted.
- Remove from heat and stir in the vanilla extract and a few drops of red food coloring until desired color is achieved.
- Add the Rice Bubbles and mix until well coated.
- Grease your hands and shape the mixture into brain shapes on a parchment-lined baking sheet.
- Allow to cool and set for about 30 minutes.
- Drizzle with melted white chocolate to create a brain-like appearance.
- Let the chocolate set before serving.
Notes
- For a more intense color, add more red food coloring.
- Store in an airtight container for up to 3 days.
- These can be made ahead of time for Halloween parties.
