Description
A refreshing and crunchy cabbage salad that can be prepared in advance, perfect for easy meals.
Ingredients
- 1 medium head of green cabbage, shredded
- 1 cup of shredded carrots
- 1 red bell pepper, diced
- 1/2 cup of chopped green onions
- 1/2 cup of chopped fresh parsley
- 1/2 cup of apple cider vinegar
- 1/4 cup of olive oil
- 2 tablespoons of honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and parsley.
- In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Cover and refrigerate for at least 2 hours, or overnight for best flavor.
- Serve chilled and enjoy!

- This salad can be made up to 3 days in advance.
- Feel free to add other vegetables or proteins as desired.
- Adjust the sweetness of the dressing by adding more or less honey.
