Ingredients

  • 1 medium head of green cabbage, shredded
  • 1 cup of shredded carrots
  • 1 red bell pepper, diced
  • 1/2 cup of chopped green onions
  • 1/2 cup of chopped fresh parsley
  • 1/2 cup of apple cider vinegar
  • 1/4 cup of olive oil
  • 2 tablespoons of honey
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and parsley.
  2. In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  5. Serve chilled and enjoy!

Notes

  • This salad can be made up to 3 days in advance.
