Ingredients
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1 cup water
- 1 cup strong brewed coffee, cooled
- 1/2 cup coffee liqueur
- 1 package (8 oz) mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 24 ladyfingers
- Cocoa powder for dusting
Instructions
- In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries burst and mixture thickens. Let cool.
- In a shallow dish, mix brewed coffee and coffee liqueur.
- In a bowl, whisk mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Dip each ladyfinger into the coffee mixture briefly, then layer them in a serving dish.
- Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of cranberry sauce.
- Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, dust with cocoa powder.
Notes
- For a non-alcoholic version, omit the coffee liqueur.
- Make sure the coffee is cooled before dipping the ladyfingers.
- This dessert can be made a day in advance for better flavor.
