Description
A delicious and healthy twist on traditional nachos, using sweet potatoes as the base and loaded with toppings.
Ingredients
- 2 large sweet potatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup shredded cheese (cheddar or your choice)
- 1 avocado, diced
- 1/2 cup salsa
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the sweet potatoes into thin rounds.
- Toss the sweet potato slices with olive oil, chili powder, salt, and pepper.
- Spread the sweet potato slices on a baking sheet in a single layer.
- Bake for 20-25 minutes or until tender and slightly crispy.
- Remove from the oven and layer the black beans, corn, and cheese on top of the sweet potatoes.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is melted.
- Top with diced avocado, salsa, and green onions before serving.
Notes
- Feel free to customize the toppings based on your preferences.
- For a spicier version, add jalapeños or hot sauce.
- These nachos are best served immediately for optimal crispiness.
