Description

A delicious and healthy twist on traditional nachos, using sweet potatoes as the base and loaded with toppings.


Ingredients

  • 2 large sweet potatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 avocado, diced
  • 1/2 cup salsa
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the sweet potatoes into thin rounds.
  3. Toss the sweet potato slices with olive oil, chili powder, salt, and pepper.
  4. Spread the sweet potato slices on a baking sheet in a single layer.
  5. Bake for 20-25 minutes or until tender and slightly crispy.
  6. Remove from the oven and layer the black beans, corn, and cheese on top of the sweet potatoes.
  7. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted.
  8. Top with diced avocado, salsa, and green onions before serving.

  • Feel free to customize the toppings based on your preferences.
  • For a spicier version, add jalapeños or hot sauce.
